At first glance I did this book a disservice, and put it completely in the food-porn category. Not so. There are also cooking tips, and recipes you might actually make.General comments:- The recipes are arranged into a series of twelve "Menus" ("Tex-Mex Brunch," "Italian Supper," etc.). This includes drink (usually alcoholic) and dessert recipes. There is a decent index (the recipe for "Kachumber Raita" is also listed under "Cucumber" and "Yogurt," for example).- The recipes are mostly from scratch (things like bullion, ketchup, tortillas, or puff pastry dough being the exceptions) and mostly not too far out (ghee, matcha, and mango chutney were the oddest ingredients I saw, and sometimes easier alternatives are listed). Prep ranges from elaborate (chicken and waffles), to simple but delicious (tomates provincales).- Similarly, the equipment is typical for a well-stocked kitchen. Pots, pans, mandoline, mixer, blender, immersion blender, commercial espresso machine (ok, that last one was a joke).- There is a skew toward Tex-Mex/Mexican/Spanish, but there are also Asian, German, Indian, English, and French "menus."- There are the obligatory full-page glossy pictures, if you like that sort of thing. I was more pleased that most of the individual recipes were arranged to fit on a single page, and that some ingredients had both volume (tsp, tbsp) and weight (gram) measures.Overall, this is a charming cookbook.1 of 1 people found the following review helpful.Four stars, yes, but could be better....By D. WilliamsThis is a cookbook edited by Valentina Rice of Many Kitchens that highlights five or six signature recipes from twelve restaurants. The depth and breadth of the cuisines she selects is very good; it begins with a French breakfast (Pain Perdu, anyone), ends with pan-Asian cuisine (sweet sticky rice with mango), and visits many other cuisines and types of fare (cocktail party) in between. The recipes are organized so that one can create a meal (appetizer, entree, and a sweet) with a particular cuisine.Though the depth and breadth of what Rice offers is good, I saw several problems. First, when I read the required ingredients for some of the recipes, I often wondered, “What’s that” or, “Saffron That’s way out of budget!” Yes, I’m very back-to-basics with my ingredients, but, as a rural person, I don’t have access within a reasonable distance to such things as ghee or pink lentils.Also, such titans of cookery as Better Homes and Gardens, among others, have given at least approximations for nutrition information – calories, sodium, and so forth. This cookbook's readers are on their own to do the math from labels on the particular ingredients.I must say, though, that as I keep looking, I see more recipes in this book that I might eventually try. My food preferences are not very trendy: I don't care for spicy food--whether Tex-Mex, Indian--or any dish that tends to be over-powered by a strong spice. My tastes are more traditional and subtle, but flavor, variety, and complexity are important to me.Despite the fact that there are whole chapters dedicated to food I don't care for, there are many flags sticking out of the book marking both recipes I tried and recipes I really intend to try soon. I've tried the chicken honey maple meatballs and the tortilla de patatas (which, by the way is photographed with a greenish tinge which is not appetizing). Both were delicious and easy to execute. I' looking forward to trying the serrano ham croquetas--a dish I love but have never managed to succeed at (I can't get them to stick together, they explode on me) this recipe has a step my other recipes don't have, so I'm going to give it a try.I'm curious about the tres leches cupcakes (although, technically, it's cuatro leches, since the topping is whipped cream instead of meringue). I'm wondering how the less-moist cupcake version will translate. There are some dishes I've heard of but have never been tempted to try before (like madeira cake) and some I've never heard of but look scrumptious ( like the pancake-like Kaiserschmarrn). So, even completely skipping whole categories I don't care for, there is plenty here to keep me busy, happy, and satisfied.I only have one negative comment and it has nothing to do with the recipes or variety, it has to do with the text size, type, contrast and layout. I would have preferred larger font size and darker text. With cookbooks, in particular, you don't want to have to keep moving up to the cookbook holder to make out a detail. (It isn't a question of space, either. I can't find an example where a larger/heavier font wouldn't have fit.) Worse of all is that a third and less readable font is used for the ingredient list and it is placed along the gutter--which means that you have to pull on or press the book down to see the ingredient list clearly. Each page has 3 type styles: basic font in italics for the general explanation; the same or similar font not in italics; then an oldfashioned typewritting font for the ingredient list towards the inside.
